ZOODLES ZOODLES EVERYWHERE!!

Have you tried zoodles yet? They are such an easy way to sneak more veggies into your healthy diet.  I finally obtained a spiralizer over the weekend and now zoodles and all sorts of noodles are the crazy in my house!

Zoodle = zucchini noodle, but you can do this with all sorts of veggies.  Carrots, squash, sweet potatoes, etc.  Anything that is firm enough to go through a spiralizer works!

Here is a quick, easy recipe that I whipped up tonight.

 

What you’ll need:

1 zucchini, 2 frozen basil cubes, 1 frozen garlic cube (or fresh clove), 1tsp olive oil, 2 tbsp Trader Joe’s Bruschetta, and 1tbsp Trader Joe’s Artichoke antipasto

Spiralize your zucchini and then heat in a pan with the oil, basil, and garlic.  (I get my frozen cubes from Trader Joe’s as well).  Heat until noodles are soft and excess water is cooked off.  Serve with bruschetta and artichoke on top! Add your favorite veggie or turkey meatballs for extra protein and serve with bread if desired.  [1 zucchini generally feeds 1 adult, adjust recipe accordingly] A quick, easy, nutritious meal with just a few ingredients.  Let me know if you try it!
