This salad is light and fresh, as well as filling and makes a perfect meal for your healthy 2016!
It’s super easy to throw together as well! Here is what I did:
- 1 can chickpeas, rinsed and drained
- 1/4 red onion, diced
- 1 cup grape tomatoes, quartered
- 1/2 red pepper, diced
- 1/4 cup sesame soy ginger vinaigrette from Trader Joe’s
Mix together and let marinate for a few hours, or overnight.
Serve atop baby spinach
