Tangy Chickpea Salad

This salad is light and fresh, as well as filling and makes a perfect meal for your healthy 2016!
It’s super easy to throw together as well! ¬†Here is what I did:

  • 1 can chickpeas, rinsed and drained
  • 1/4 red onion, diced
  • 1 cup grape tomatoes, quartered
  • 1/2 red pepper, diced
  • 1/4 cup sesame soy ginger vinaigrette from Trader Joe’s

Mix together and let marinate for a few hours, or overnight.

Serve atop baby spinach
